Kefir and Kefilli

So you have all talked me into kefir and I've fallen in love with

the stuff. Please, please may I have some grains? Or can I just

add milk to the stuff I bought at Whole Foods? I have not felt

any " grains " in it at all. Or alternatively, where can I buy kefir

and kefilli?

Is there an advatage to have separate kefir, kefilli and villi all

going at the same time? Or are they pretty much interchangable in

the diet?

Do you all know of Quark? The label says " yoghurt cheese " , but it

seems somehow different from the yoghurt cheese I've made by hanging

yoghurt in a cheesecloth.

I'm thinking of trying saurkraut - I have a cabbage and " Putting

Food By " . I don't have " Nourishing Traditions " so I don't know how

whey fits in. Would you use the whey from any of the above? What

about the Bob's Red Mills dried whey?

Woopsie me, quick draw McGraw, replied with no content. Making kefir

from kefir grains is a great, satisfying endeavor. The stuff from the

store is devoid of grains as it is strained. You can find kefir grains

through the group or GEM Cultures, I believe.

For sauerkraut, you need no whey and may be best without it. I tasted

my kefirkraut today (kraut made with kefir grains). It was fizzing away

like Heidi's apple kefir beer does. I made it sweet with raisins,

apples, red cabbage, tamarind, cumin and cinnamon. It is like a

tamarind chutney. Using kefir grains a la Dom's website, enabled me to

use little salt and achieve a spicy sweet ferment which is a refreshing

change of pace from traditional krauts/chutneys.

I can send people kefiili grains, but now mine seem to have

gone thin and sour and I need to revive them ... !

Can this group be considered a source for kefir grains? If so,

I would like to have someone add it to their list of sources.

I noticed on Rejoice In Life's PROJECT KEFIR page they

list Nourishing_Traditions_UK group as a source for grains.

I know Dom's Kefir In-Site is at the top of many people's lists,

but I am just covering all the bases. I'm not trying to mash

any toes.

~~~There's also the kefir email group. That's where I got my second batch

I for one wouldn't want it listed as such ... then folks would

be dropping in JUST for kefir grains, and it's busy enough

as it is!

Thanks but I have those already. My original question was

" Can the NT group be considered a source for kefir grains? "

I've decided against asking someone to add this group to their

comprehensive list. Like I said I don't want to mash any toes.

But if someone decides to create a butt and breast clearing-

house this group should definitely be listed. Butts and breasts

have alot more traffic here than kefir. :)
