I use kefir cream instead of mayo because it is so good at killing " bad " bugs, so if a sandwich gets left out it's not likely to grow anything that might make someone ill, like listeria. I think coconut cream kefir would work too, for the non-dairy folks. It has a little reservoir in the top where you pour the oil and it drips it into the processing mayo. Guest guest Posted February 23, 2005 Report Share Posted February 23, 2005 I use Mercola's recipe: 3 cups leftover cooked free-range chicken 2 cups coarsely diced celery 2 Tbsp. celery 1 cup jicama, peeled and cut into matchsticks (we omit this) 2 tsp. lemon juice 2/3 cup homemade mayo (I use the NT recipe modified: 1/3 each olive, safflower, coconut oils) 1/4 cup walnuts (mine are NT-crispy) 1/2 tsp. sea salt 1/2 tsp. pepper Mix everything together. NOTE: This also makes an awesome chicken casserole. Mix everything together, put into a casserole dish, and top with grated cheese, and bake at 350 for 15-18 minutes until warmed.
