I missed you and I'm so happy to see you're back!

As far as I know, you will get little whey from creme fraiche as it is

cream, not milk, and has a lower water content. There will be some,

but not a significant amount. But you can use it.

I can't find your previous post, but is there a reason you can't just

clabber a quart of milk?

I reckon you could just use a couple spoonfuls of the creme fraiche

itself to soak the grains.

Save the whey for the fermented vegetables or just use extra salt.

We need more pictures of the baby!

Is the creme fraiche homemade? Even if so, it's not likely to be a good

fermentation starter, because it's cream-based and thus had little lactose

to begin with for the culture to feed on. I do use whey from my yoghurt

sometimes (I make yoghurt with pure cream) but when I'm doing something

serious, I'll generally make yoghurt with half and half or even plain milk

expressly for the purpose of straining out some more biologically active whey.

Can I clabber with buttermilk? Remember I just have pasturized stuff to use, or

woild raw milk from a convential (read drugs and bought feed) dairy still be

better than store milk? And as for pictures of the Liddy bug, well what mother

doesn't leap at the chance to show off her sweeties!!!

I would not get raw milk from a conventional dairy.

I would wonder if their milking process was less

clean because they expect the milk to be pasteurized.

OTOH, I think the raw milk I grew up on was from a

conventional dairy, and it never made me sick.

Hi,

This isn't a conventional dairy, it's a small, family owned, local

goat farm. They actually don't sell the milk for profit, they drink

it themselves :) They use their goast to produce " fancy " cheeses

for sale- I bought some at my local health food store, and it's

soooooooo yummy! So I emailed them and asked if they also sell raw

milk, and they do sell it " under the table " so to speak, to us

locals that want it.

I've had raw cow milk from a cow that was in a traditional, factory

farming type setting, and I didn't get sick from that, so I would

assume that raw milk from pampered goats on a family farm that

produces award winning cheeses is safe.......and, from everything

I've read, raw milk doesn't pose much more of a risk than any other

food.....am I right?

I'm still learning.....
