I use safflower oil that is mostly MUFA, so it's *neutral* in terms of health. Commercially prepared mayo is terrible for you precisely because of the kind of oil used (worst quality soy or canola). However, I think the OP is trying to " convert " her family--a difficult thing to do if they are used to junk food and aren't passionate about their health. Also, do you add whey to your mayonaise receipe and leave it on the counter for a few hrs, so it will keep longer? How long does your's stay fresh?
