Of course you would want to substitute raw milk and cream. -- Ben and Jerry's basic ice cream base Makes 1 quart. This is the base which can have just about any old flavour added to it. 2 large eggs 3/4 cup sugar 2 cups heavy/whipping cream 1 cup milk Whisk eggs in mixing bowl until light and fluffy 1-2 mins. Whisk in sugar, a little at a time, then continue whisking until completely blended. Pour in the cream and the milk and whisk until totally mixed in. Place in ice cream maker as per manufacturers instructions. of pour ice cream base into a lidded tub and place in freezer. To prevent too many ice crystals forming, you will need to remove the tub from the freezer every 20 mins and thoroughly whisk/beat the ice cream incorporating any crystals along the edges of the ice cream. To make French Vanilla- Using the basic recipe above, either add 2 tsp vanilla extract or the scrapings/seeds from a vanilla pod to the mixture as you add the milk and cream. Whisk thoroughly to incorporate and freeze. To make Mint chocolate chip- First make Bens Chocolate ice cream- 4 oz unsweetened chocolate 1 cup milk 2 large eggs 1 cup sugar 1 cup heavy/whipping cream 1 tsp vanilla extract 1 pinch salt Melt chocolate in microwave or over double boiler then gradually whisk in milk and heat, stirring constantly until smooth. remove from heat and let cool. Whisk eggs in mixing bowl until light and fluffy 1-2 mins. Whisk in sugar, little at a time then continue whisking for another minute. Add cream, milk, vanilla and salt and whisk to blend. Pour chocolate mixture into the cold cream mixture and whisk until blended. NOW-either add 1 teaspoon of peppermint extract into the icecream, OR- Add 3/4 cup of coarsely chopped Andes or other thin mints OR- Add 1 to 1 1/2 cups coarsely chopped Mystic Mint cookies OR- Add 1 teaspoon peppermint extract and 1 cup coarsely chopped chocolate Oreo Cookies Whatever of the three options you choose, add it to the chocolate icecream and stir until thoroughly incorporated.
