I would add a caution that I think the containers used in bread making machines

have

internal surfaces that are coated with a non-stick compound such as teflon.

I use a really cheap Toastmaster model TBR 15, (I paid $20.00). It works great;

very consistent quality bread, has 8 different cycles, including a bake only

cycle, which you can set the timer yourself for desired length. Horizontal pan.

Fairly easy to clean. I haven't made wheat bread in it, just non-glutenous

breads, but they've turned out perfect every time.

Anybody have recommendations for bread machines suitable for making

breads from unbleached whole wheat or rye flour? Tomorrow I may go

looking to purchase a bread machine. In anticipation I just now put

some homemade kefir whey in a jar with 1 cup flour and 1 cup water

to get a sourdough starter going. The kefir yeasties and

lactobacilli should make a passable sourdough bread from what I

hear. Anybody in the group care to relate their successes with kefir

sourdough starter?

If you are making non gluten recipes in your bread machine and having

perfect loaves.... you should share the recipe!!!!

As for making sourdough quality bread. I just replace all the water

in recipes for kefir. It gives the bread a very nice texture and a

soury taste! You could make more of a starter base and go from there.

But I like just replacing these ingredients!
