I would add a caution that I think the containers used in bread making machines have internal surfaces that are coated with a non-stick compound such as teflon. Guest guest Posted October 5, 2004 Report Share Posted October 5, 2004 I use a really cheap Toastmaster model TBR 15, (I paid $20.00). It works great; very consistent quality bread, has 8 different cycles, including a bake only cycle, which you can set the timer yourself for desired length. Horizontal pan. Fairly easy to clean. I haven't made wheat bread in it, just non-glutenous breads, but they've turned out perfect every time. Tomorrow I may go looking to purchase a bread machine. In anticipation I just now put some homemade kefir whey in a jar with 1 cup flour and 1 cup water to get a sourdough starter going. The kefir yeasties and lactobacilli should make a passable sourdough bread from what I hear. Anybody in the group care to relate their successes with kefir sourdough starter? As for making sourdough quality bread. I just replace all the water in recipes for kefir. It gives the bread a very nice texture and a soury taste!
