Slice 4 vanilla beans lengthwise and then break or chop into small pieces. Put in a pint sized jar and add 1/2 cup brandy or vodka (I prefer brandy) and 1/4 cup water. Let sit for 3 weeks, shaking occassionally. deb OT, Homemade vanilla extract My dh and I just came back from Sams after buying and returning a 16 oz bottle of vanilla. I had sat down waiting for hubby to checkout and when he finished he came over and said " Did you know that the vanilla was $20.00? " After fainting, I had bought 2 bottles awhile ago at about 3.99 a bottle and am getting to the end of my supply) I said return it that is a ridiculous price So... Dh said to make our own from now on. Does anyone have a 'TNT recipe for making your own extract? I found many versions on the net, some with sugar, some without, etc. I would love to know if someone already does this and what recipe they use. Also, I found a supply of organic beans that seems reasonable in price but there are the following different kinds of beans. Any ideas? Commercially, vanilla extract is made by soaking vanilla beans in alcohol ... I have not done this with vanilla beans, but I do soak ginger pieces in vodka to keep some " emergency ginger " around (which works rather nicely ... vodka soaked ginger works in most recipes). You can soak just about anything in vodka to make an extract. The old recipe books all mention " vanilla sugar " which is made similarly ... I wasn't impressed by it especially though. I've never tried, but keep meaning to.... Take 1 vanilla pod. Place in a small 350ml bottle of vodka for about 3 weeks. Then it's ready to use! you can keep topping up the bottle and you need to start again when the vanilla taste fades.
