I live in San Francisco, CA where raw cow's milk is readily available at natural food stores, though often sold out. I am a cheesemonger, home cheesemaker, and I am studying to be a professional cheesemaker. It has been my experience that cheese made from raw milk tends to have a greater depth of flavor and more nuances that cheese produced from pasteurized milk. I am also interested gaining more knowledge regarding the health benefits of raw milk. I have read and heard conflicting information especially from customers with compromised immune systems. Question for the list: A few months ago, I was talking to a woman who belongs to a local milk co-op. She promised to pass along the contact info as I'd love to have better access to real milk for my cheesemaking. Well, I never heard from her again (nor have I seen her back at my local natural food store.) Does anyone know if there is a milk co-op here in San Francisco that might be taking on new members?
