Guest guest Posted September 21, 2006 Report Share Posted September 21, 2006 Regarding cheese - yes, that is the other thing to know - my teensy little microdairy with just its one 6'x12' milk processing room has as of July 5th this year been licensed to make aged raw milk cheeses. So, this one little room is being allowed to do " triple duty " : milk room, milk processing room for bottling, and cheesemaking room. This gets back to being scale- appropriate and I think also the fact that I run my dairy by myself so it is always me, myself & I in charge of quality control which gave the inspector faith in what I wanted to do. That said.... I have been spending all my time running around delivering milk and trying to get new markets, plus August was so dang hot it was usually 85 - 100F in my cheesemaking room ... now the weather is perfect, and if I can find the time, YES!! there will be Rainhaven Goat Cheese finished aging by 2007!! Everyone loves cheese, it will be even easier than raw milk to sell. I had Kathy Biss from Scotland come out in late July to give a 3 day cheesemaking workshop featuring traditional British Isle cheeses for a small group of dairy farmers, and she was sooo great! It was like having Childs teach cheesemaking, the same sense of humor and approach. My cheese vat is just a 5 gallon stainless steel stock pot. To truly be more economical to make, I do need to look at getting closer to a 20 gallon cheese vat at some point. But for now I am really amazed it happened so easily and quickly. I stuck it in the oven and turned on the light... as I was doing something else, I mistakenly turned the light off for quite a few hours... I turned back on around 6pm and will leave all that stuff in the oven 'til the morning to, then, drain. I have no idea if that will work, but rather I'm curious what kind of cheese this will make, as I'm in the extreme beginning stages of researching how to make cheese for myself and my family only.
