pecan pies with now, my whole family loves my pies.....any suggestions?

I too am a lover of both marshmallows and pecan pies!

I found that the Lundberg's rice syrup worked great in pecan pies... I use

the same amount. My pie recipe called for light kayo syrup and I have been

real happy with the rice syrup replacement.

We have a recipe for homemade marshmallows. They use sugar... I have not

been able to make it work with sucanat but I get the organic sugar. Once or

twice a year we make these and they are really yummy. I would be happy to

share the recipe... super easy.

Non-NT recipe... :-) but at least not corn syrup

MARSHMELLOWS

Powdered sugar for dusting

2 tbsp Boxed unflavored gelatin

8 tbsp Cold water

2 C Sugar

1/2 C Cold water

1/4 tsp Salt

2 tsp Vanilla

Dust an 8 x8 pan with powdered sugar. In a small bowl soak 2 tbsp gelatin

in 8 tbsp cold water. Set aside. Combine sugar, 1/2C water in a saucepan.

Cook and stir over medium heat until sugar is dissolved. Add gelatin to pan

and bring to boil. Pour into a large bowl and let stand until partially

cooled. Add salt and vanilla; beat with electric mixer until soft and

doubled in volume. Pour into powdered pan to about 1/2 inch thick. Set to

cool until it will not stick to fingers. Cut into 1-1/2 inch pieces and

roll in powdered sugar.

Note: Toasted coconut can be substituted for powdered sugar

CAMPFIRE MARSHMALLOWS

Double the gelatin from 2 to 4 tbsp.
