Guest guest
Hello everyone, Sure appreciate the posts, and information people share. I was looking through the files for a yoghurt recipe and didn't find one. Being a newbie to much of this making of things with Raw Milk. I was wondering if you could all share recipes and instructions on how to make Goat's yoghurt? Would really love to be making our own. Thanks in advance, luise
Guest guest
I buy my supplies from Dairy Connection. But, you can use any store bought 'live active culture' yogurt. Using the 'plain' will probably work best so you don't have that hint of whatever fruit/flavor the original yogurt happened to be. Goat milk yogurt will be thinner in consistancy than cow milk yogurt. Both when homemade will be much thinner than storebought because you are not adding thickeners like geletin and corn starch. I use the gallon pickle jars to incubate my milk because they have a nice wide mouth to easily get yogurt out. If you don't want that large a container, then your wide mouthed canning jars work great. A cooler filled with two liter and gallon bleach jugs full of hot water works great as an incubator. The trick to having long, stable temperature is to totally fill space with either your milk or the jugs. I use hot tap water at about 115*F. Goat Milk Yogurt (Plain) Heat your milk in a double boiler to 115*F (use a thermometer!) to every half gallon of milk, add 2 teaspoon cultured yogurt (I will put it in a tea cup and then add enough of the milk to it to make it nice and liquid and then stir that into the warmed milk), 1 cup powdered milk (optional, it just makes a thicker yogurt) Leave to incubate for about 6 to 8 hours. When thick enough, it's done. Refrigerate. My favorite mixture is add some honey and blueberries. Strawberris are great, too! The cookbook that Jane Toth did, Goats Produce Too! has some great recipes in it that I have enjoyed using over the years.
