If the cheese can be made in large amounts, and is easy to purchase, it is, and should be, less. They mentioned that there are more government subsidized cheese plants in Great Britain, and that their cheddars are often less than many of our Cheddars for that reason. My cheese is over $30. a pound, but then I can't make a lot, it is in keeping with similar types of cheese in shops, but as of yet, I only sell it direct. I sell all I can make. I think it is up to the producer to figure what it will take to stay in business. I don't gouge anyone, I am responsible, and often struggling and weary. Customers trust me, as I educate them about what and why I do things the way I do. This is aged raw cheese, not fresh, and that also makes the price go up. It is important to be able to sustain yourself. The clean natural ways are very slow, and you just cannot keep up with industrial amounts of food.
