Why is my cottage cheese so sour?

I made cottage cheese, finished it up today. But it was real sour

tasting...is that how its supposed to be, or did I mess up somewhere

along the way? I used raw jersey milk, left it in a cabinet for about

a day and a half. lid on, but not screwed on. It was all one big curd,

so I figured it was done? Cooked it a little, till it was firmer, then

strained. I rinsed it twice with water before adding the salt. What do

you think?
