I like to squeeze lemon over lamb before I season it and it seems to kill any harsh flavor, like with store bought lamb vs. the delicate flavor of home grown. I may have to give it a try. You are correct in that when I look at what is available A.I. these days, or when I look at other examples of what is considered quality cattle, it looks very undesireable to me (within the Dexter breed only I am talking about, I do not have experience outside of the Dexter). But yes, I really love the traits that were in the original quality herds, and I cannot find them anywhere anymore in the U.S. It sounds like you have paid some dues, and have done your due diligence. After your explanation, I have to agree with you, especially about the farming politics. Do you live in NZ? I know they have a different outlook on farming. Probably because of the smallness of the place. Money drives farming these days and it is a darn shame. It actually disgusts me. Bottom line for me is quality of life, both for me and my herd.
