I made a single serving for myself first to see if it was edible. Cook cauliflower in microwave until soft Mash up similar to mash potatoes Add a dab of sour cream (I used fat free) Add a dab of shreded cheese (I used low fat) Add a few bacon bits (I used lowfat turkey bacon) Mix all together and voila! I enjoy experimenting with food and cooking it can be fun and very satisfying on many levels. Yum! I love anything cooked in wine! Can I come eat at your house Jill? Guest guest Posted December 5, 2000 Report Share Posted December 5, 2000 Sandie, What I was commenting on is the quantity of oil suggested - having seen the size of many more mature mediterraneans I'm careful of falling into the trap of thinking that if something's 'good' or 'better' you can use it more, it's still oil and it's still 100% calories from fat. As Barb said moderation is the best method. Also Olive oil had different heat retention properties to other oils and therefore is not suited for certain forms of cooking, so choose the oil or fat most suited the purpose. Very often you can cook with substitute liquids like water, fruit juices or wine and alcohols so not 'frying' at all, or use a mixture of oil and water, very often the natural juices or fats of the food will be sufficient to cook the food. I enjoy experimenting with food and cooking it can be fun and very satisfying on many levels. I might try the half oil/half water or perhaps try a bit at a time to see how it mixes together.
