Like most, all our Nic eats/craves all Gluten items. Has anyone found a substitute for goldfish? Has anyone found a great recipe for white bread. I made some this weekend (with a mix of flours) and I couldn't even get passed the strange smell (hubby thought it was the rice flour). I have a breadmaker and am hoping someone might have a tried and true recipe. Also looking for a cake-like sugar cookie recipe that I can slap some icing and sprinkles on to replace his favorite cookie. Is there an over-the-counter (for lack of a better term) vanilla? Guest guest Posted November 30, 2009 Report Share Posted November 30, 2009 We are not just gluten free but we are yeast free as well so I can offer nothing in the way of bread. However, there are several good breads that are gluten free but with yeast at our local grocery store. These items are often hidden so see if you can get the store personnel to show you all of your choices. I have spent the past month practicing gluten free sourdough bread and have a fairly good recipe but at this point we think “bread, big deal.” Rice flour is pretty plain so I don’t think that is what smelled. In a finished product the rice flour will not taste funny but might be gritty. We have not had any difficulty getting vanilla that says “gluten free” on the label. Where do you live? We discovered that once we went gluten free (and I did it with the boys so I would have a better sense if they were hungry) we replaced bread items with something entirely different. For example, instead of peanut butter and jelly sandwiches my boys are always asking for either peanut butter and apples or peanut butter and bananas. We eat gluten free muffins for breakfast or for a snack in a hurry. I always use sorghum as my base because it is the most nutritious flour that is also the least expensive. We order 25 pounds an once from Twin Valley. For muffins, if I don’t want to bother with xanthan then I make sure to use either tapioca flour or potato starch flour and then something more healthy like teff or amaranth. Teff is our favorite but very expensive. Amaranth as a strong smell but provides good texture. One of my boys loves anything pumpkin so pumpkin muffins are: Most of a can of pumpkin (have to leave a little for the dog) 2 eggs Pinch of salt Either 1/3 cup of canola oil, flax seeds or dairy free margarine Various spices – your call – I make them different ways 3 teaspoons of baking powder 2 cups of flour (1 cup of sorghum, ½ cup either tapioca or potato starch, ½ cup of teff) 1/3 cup of sugar (I’m sure real recipes say to put in more but I try to limit our sugar) Check the consistency and if it looks good, put in muffin pan and bake. I think rice flour works better in something like brownies where you want a different texture. It is more “chewy”. I have a few gluten free recipe books but the internet is the best source. Good luck! Going gluten free made a huge difference for one of my boys. Some difference for the other but personally, I really like it. I never have stomach aches any more.
