diet and may as well make it a good one

BTW, do you folks know if you cookd down to soften these types of veggies in

a microwave, you do not need any oil?

I just prefer the flavor with alittle oil

Okie dokie :)

BTW I made the vegetable concoction with 2 tabs of olive oil but half of the

vegetables cept the eggplant went into an orzo concoction so I more or less

made like 20 servings or more from those 2 tablespoons. The eggplant, I

cooked down without oil in the microwave. I was able to dine tonight on

boneless & skinless grilled chicken breasts and these 2 sides getting very

full with everything cept guilt.

Exactly. WW (and all weight loss programs that I'm familiar with) requires

that you have a little fat in your daily diet. The body needs it. We

usually consume a *lot* more than the body needs, so the body holds onto

it... on our hips, tummies, thighs, etc. :-)

But yes.. use oil. Just remember that the more you use, the more points

(or rather.. the more fat you're adding to your diet).

By all means use the oil and get the flavor that you want. Just pay

attention to the amount. You can probably get good flavor with a smaller

amount of oil than you normally use. I will continue to use oil, butter,

margarine, etc.; but because I'm following the WW program, I'll be sure to

measure it and count the points. And don't forget you can always use the

flavored cooking sprays. I love butter-flavored Pam.

Hmmm... I'm not sure. I just looked in the book, and it says:

Fat Free Cooking Sprays: Buttery spray - zero points; cooking spray - zero

points.

I don't know if they're talking about real oil sprays here. I would guess

that real oil has fat, and therefore some point value. If you have some

(or buy some) send me the nutritional values on the can and I'll let you

know if there is any point value.

It cooks like zucchini if you have had that but I like eggplant more

Eggplant absorbs other flavors well so even if you aren't crazy about its

taste, you can flavor it as long as it is cut thin or in small pieces. I

prefer it peeled cuz the peel can be hard to chew. The thing I made today can

be eaten as it is as a side dish or even over pasta or rice as a sauce served

as a meatless main dish. Has anyone ever seen the new flavored stewed

tomatoes? I used the Mexican style for the veggies and the Tex-Mex style for

the rice today (Tex Mex was stronger than the Mexican but both were good). I

didn't add any other seasonings. Actually it was A & P's private label American

Choice so it may not be available everywhere if A & Ps have disappeared in

other areas.

The oil sprays I use are from Spectrum...from the natural food store.

The nutritional info chart indicates that a 1/3 second spray of it is 0

calories. It's up to us to be honest with ourselves....if you spray

for five seconds, it's probably gonna yield about a teaspoon of oil

(not sure though). I spray for a second and count 0...and I've done

fine by that.

This is exactly what I did yesterday

I rinsed it in cold water, peeled it, cut it into small cubes then cooked it

in the microwave till tender (no water, no oil)

then added sauteed onions, green peppers, & garlic

then a can of stewed tomatoes which happened to be Mexican flavor but you

add regular canned tomatoes or stewed tomatoes anf flavor it with oregano

and

pepper, etc (to your tastes)

heat it all up & serve hot as a side or over pasta or rice

even sprinkle with alittle grated parmesan if you like

LOL I know what it looks like. I mean they didn't have it....they didn't

have alot of thinks today....no good tomatoes, no fiji apples etc...
