Hi There,

I hope everyone has been enjoying the holidays. Until

lately, I had not been able to type/write much due to

some arthritis in my hands requiring prednisone. It

was also helpful for my lungs.

Tonight, I’m going out to visit with friends. It will

be nice to have a get together. I still have some

Christmas cards that did not get delivered this year!

Next year I " really " will mail all my cards (actually,

I said that last year and the year before that, etc),

but one always hopes to be able to deliver more in

person which allows for visiting. It just seems that

“time” again got the upper hand. Anyhow, maybe this

just means that our holiday time is extended a bit and

we still have the chance to meet with friend sand

family which is nice and just extends the good

times.0)

My mom’s health has also been of concern lately. She

is having some heart related problems in addition to

her other health issues.

Fortunately, Dad does well and our furry children are

happy, although Bonnie cat will be upset when the

Christmas tree comes down. She just loves lying under

the tree and enjoys playing with her little kitty cat

toys. Suzzy dog on the other hanbd is now an

14-years-old and simply enjoys resting.

We are still waiting to hear back from the transplant

doctor in Montreal and hoping that the answer will be

a resounding " YES. "

Praying for the people of East Asia. This certainty

puts the “little things” in our own lives into

perspective and we realise that they are not all that

important. Each day is Blessing and we in have so

much that we take for granted and so much to be

thankful.

I’m making an Apple Crisp for New Year’s Dinner

tomorrow. Dad will be my helper…. Helping with the

apple peeling!

recipe below. This is a Maritime tradition (Maritime

provinces are Nova Scotia, New Brunswick and Price

Island).

The following was found on a website (with source

included at the end of recipe).

Apple Crisp

Preparation Time: 30 mins

Cooking time: 30-40 mins

6-8 servings

* 6 cups apples, peeled cored and sliced

* 1/2 cup brown sugar, finally packed

* 1 tbsp. lemon juice

* 1/2 tsp. cinnamon

Topping

* 1/2 cup flour

* 1/3 cup butter

* 1/2 cup brown sugar, finally packed

* 1 cup rolled oats, old fashioned

* 1/2 tsp.cinnamon

1. Preheat oven to 350F

2. Combine apples, sugar, lemon juice, and cinnamon,

and place in buttered 6-cup baking dish or 8-inch

square pan.

3. Place flour in mixing bowl, add butter and rub or

cut in until mixture resembles breadcrumbs. Add sugar,

cinnamon, and rolled oats and rub well into mixture.

Spread mixture over apples and pat firm.

4. Bake at 350 deg.F until apples are tender and

topping is brown. Serve warm with whip cream, custard

or ice cream.

Variations Apple-raisin-- Add 3/4 cup of raisins to

apples. Blueberry-- substitute 6 cups fresh or frozen

blueberries for apples. Rhubarb--Substitute 6 cups cut

up rhubarb for apples, Replace 1/2 tsp. cinnamon with

nutmeg.

When it's apple blossom time in polis Valley...the

which it produces. And you'll sing the praises of this

scrumptious Nova Scotia farm recipe for apples crisp.

Serve it warm, with lots of cream.
