I've been trying to track down more information on this, but so far, the article I referred to above is the only specific thing I've found. I'm particularly interested in this as I have had some very high BGs after eating a large percentage of fat compared to protein and carbs, and it would seem to explain that phenomenon. Gabe probably wouldn't be affected the same way, as he is less likely to have insulin resistance than someone with type 2. So unless you're seeing unexpected results, you probably don't have to take this into consideration in dosing the insulin, and can continue to just allow for the slowing of digestion factor. However, for those of us with insulin resistance, this may mean we need to either limit our fat intake or increase insulin doses when consuming a high fat meal. And most likely it will be one of those things that affects everyone differently! If I find any more information on this subject, I will pass it along.
