Guest guest Posted July 2, 2005 Report Share Posted July 2, 2005 EZ Summer Salad (especially for diabetics) Small box of Sugar free Lime jello. Small box of Sugar Free Lemon Jello. 1 cup cottage cheese. Sliced veggies of choice. (green onions, cucumbers, radishes, and shreddred carrots etc) Dollop of Mayonnaise. Mix the Lime Jello according to directions on box and refrigerate until slightly firmed. Then mix in the cottage cheese and return to the refrigerator until solid. Mix the Lemon according to directions. Add in sliced veggies of your choice (green onions, cucumbers, radishes, shredded carrots, etc). Pour onto top of set Lime mixture, refrigerate until firm. (Actually, the order of the layers is a matter of preference) Serve on a bed of lettuce with a dollop of mayonnaise. ~ " If I could reach up and hold a star for every time you've made me smile, the entire evening sky would be in the palm of my hand.
