Guest guest Posted May 24, 2005 Report Share Posted May 24, 2005 EZ Zucchini Casserole 3 c. fresh plum tomatoes, seeded and chopped 3 c. zucchini, chopped 3 medium onions, chopped 3 cloves of garlic, minced 1/4 c. fresh parsley, minced 1/4 c. fresh basil, finely chopped 1 c. mozzarella cheese, shredded 2 1/2 c. bread crumbs Coat shallow baking dish with nonstick vegetable spray. Place tomatoes, zucchini,onions, garlic, parsley and basil in a pan. Mix together cheese and bread crumbs. Toss 1 1/2 cup of crumb mixture with veggies. Sprinkle remaining crumbs over top of veggies. Refrigerate until ready to bake.
