It's good to search Bee's site and also the member questions first because so many questions have been asked before and you can often find your answers right away and in depth. Regarding veggies: Bee does recommend cooked vegetables because cooking breaks down the cell walls of the veggies and makes the nutrients more available and easier to digest. This is so important for Candida folks because we--as a group-- are usually undernourished since we can't assimilate all the nutrition in our food because the Candida prevents all the nutrients from being used by our bodies and because we often have poor digestion. But lettuce is a good way to wrap sandwiches instead of bread. And we all crave a little crunch now and then and cucumbers can provide that. You won't go wrong by cooking most of your vegetables, and you can cook lettuce and cucumbers as well if that appeals to you. In the starting out info Bee emailed you, she has some recommendations on how to transition to this diet. But it's a guideline, since so many of us have different needs for making the transition. It's really important to get your supplements and coconut oil so you can take all the supps daily and work on increasing your coconut oil intake. I also found that eliminating sugars was a tough step, so I did that more slowly than others. I found that getting my fat levels up and getting my ratios in line with Bee's recommendations was really key. But adding fats into your diet has the wonderful effect of helping curb your sugar cravings. I didn't realize at first just how much fat I needed to consume to fall in line with the optimal levels Bee has outlined. So, I found that using the calculator Bee has on her website was really useful to get a clearer sense of where I was at versus where I was heading. Personally, I use two egg drinks a day to insure that my fat intake is where it needed to be. You may have read that we are trying to get our bodies to run on fats for fuel rather than sugar and that transition will take some time, I believe Bee says it will probably take at least 3 to 4 months. So just keep plugging away and you'll get there. I hope this is helpful to you. Basically, transitioning to this diet is somewhat individual, just do what you can because each person's die-off is something they need to live with. You can't prevent all die-off nor do you want to, but you have to manage it so that you can still function. I was able to live with die-off that made me feel like I had a low-grade cold, but I didn't need to stay in bed. And as I felt my energy increase, I was encouraged to get more fully on the diet. I realize I start by eliminating the bad foods and start with some supplements but is there somwhere on the site that has a step by step - like what things to incorporate and at what time frame? " IF " you have digestive problems you should only have cooked vegetables and of course cooking helps you get more nutrients from them too. However I'm not going to deny people salads if they want them and sometimes it is necessary to have raw foods. Some people can have many other health issues but their digestion is okay. By the way you can also cook lettuce and cucumbers. There is no timing of the phases since each person has to go by their own healing/die-off/detoxifying symptoms as to when they are able to go to the next step. But don't be concerned about the steps since I am revising the program to eliminate the 2nd antifungal step and probiotics.
