Since potatoes are very bad for a diabetic, a good substitute for mashed potatoes is to take a head of cauliflower and steam it. Pat it dry with paper towels and mash with butter and milk, salt and pepper, just like you would do with potatoes. The cauliflower must be steamed so that it is soft or they won't whip right. If they are lumpy, you can put them in a food processor, but most of the time a regular mixer does a great job. I was amazed at how good they are. I made this for my FIL who HATES cauliflower. I had to chuckle when he ate the whole bowl himself. After he was done I told him what he ate and he was shocked. Home fries can be made by grating the raw cauliflower and frying them just like you would potatoes.
