The friend who gave the recipe to me had a husband who apparently was a brittle diabetic, and she says she has all sorts of info, but I'm not sure that he was into carb counting. Guest guest Posted February 4, 2004 Report Share Posted February 4, 2004 Hi Devon. I can *guarantee* he was brittle diabetic because of eating the ADA exchange diet. I was on that for 25 years and was classified a brittle diabetic. Brittle diabetic means you can't control your blood sugars. Having been on carb counting for about a year now, my blood sugars are 100%, or about 98%, under control and mimic blood sugar readings of a person who doesn't have diabetes. My last a1c was 5.3 to give you an idea. Carbs break down to sugar and spike your blood sugar. By getting rid of quick acting carbs out of your diet, like biscuits, breads, cereals, pasta, rice, etc., and replacing those with green leafy veggies and meats, your not eating sugar so your blood sugar *can not rise to extremes and make you brittle. Not only that, if the sugar is not in your blood, how can you developed diabetic complications? You can't, it is that simple.
