I'm so excited -- a new store has opened blocks away from me called

" LoCarbaret " -- a whole store devoted to low-carb foods! Including two

different kinds of breads made from mixes-for-breadmakers which they sell

too, made or in mix form -- a whole loaf has 21 carbs! They stock

Bernstein's book, the Atkins' books, all kinds of low-carb stuff as well as

stevia in several different forms. They have a website which I haven't

checked out but I assume they do mail order too. The address is

I have a low carb store just a block and a half from my house. I live in

Florida and it is a haven for low carbers. You can't imagine how many

products I can get. I am a little suspicious of some of the carb counts

and don't overdose on these but for a treat, it is wonderful. My

nutrition store is now carrying low carb bagels and rolls among other

goodies. If anyone wants to know where these places are in the Pembroke

Pines/ City area, please e-mail me. The stuff is great and has not

increased my BG level.

Let us know how it works.....if it tastes decently, please give the

brand.....I periodically work in Portland (like this Saturday) and it would

be fun to try something new that doesn't negatively impact BG levels!

sandwich bread). It really didn't impact my BG! I didn't make a note of the

brand name but they have a toll-free number (877 6-lowcarb) and you could

call and ask. They carry two brands -- I bought the one that was very

slightly sweetish. She said the other one doesn't taste as good. Vicki

I can't help but wonder if the same effect could not be achieved (if one had

a breadmaker) by just adding additional yeast to the recipe, to make them

airier? Usually, bagels are really dense. These puppies sound like they

exited the toaster like flying saucers!

I've mentioned before that other flours are much lower in carbs than wheat

flour, so that would be a place to begin ... IF one had a breadmaker. A

breadmaker and careful selection of ingredients could be a real asset to

maintaining good health while keeping meals interesting.

The lowest-carb flours run thusly for 100 grams:

sesame flour, high-fat 26.6 grams

sesame flour, low-fat 35.5 grams

peanut flour, low-fat 31.3 grams

peanut flour, defatted 34.7 grams

soy flour, full-fat 35.2 grams

soy flour, low-fat 38.0 grams

soy flour, defatted 38.4 grams

In the 50-80 grams range, you have:

pecan flour 50.7 grams

acorn flour, full-fat 54.7 grams

chick pea flour (besan) 57.8 grams

dark rye flour 68.7 grams

whole grain wheat 72.6 grams

barley flour 74.5 grams

corn flour (masa) 76.3 grams

brown rice flour 76.5 grams

medium rye flour 77.5 grams

barley malt flour 78.3 grams

white rice flour 80.1 grams

light rye flour 80.2 grams

In the carbohydrate stratosphere, we have:

potato flour 83.1 grams

arrowroot flour 88.2 grams

carob flour 88.9 grams

The fats in the flours makes them go rancid, so it's a good idea to buy the

low-fat or defatted versions - even though they are higher-carb - and to

keep the flour sealed and refrigerated after opening. The low-fat peanut

flour looks like a winner - as do the defatted peanut flour and the low-fat

sesame flour. Those flours can most likely be ordered off the internet, if

not available in your area. (I would try http://www.altavista.com, and type

in quotation marks " low fat peanut flour " and then do another search for

" defatted peanut flour " and then " low fat sesame flour " ).

I could do a web search for deals on breadmakers if anyone is interested ...

Vicki,

I doubt they would part with the recipe. Low Carb World will not even

sell to anyone but a retail store. Some friends of mine have tried to

buy from them and the answer was a resounding " NO! " I could send you

some if you want to try them.
