I haven't had problems with dairy before becoming a vegan, but now that doesn't matter since I have no dairy in my diet anymore. I actually have read and believe that whole grains are wonderful for you and important and actually act as anti-inflamators. I try to avoid white sugar and white flour as much as possible, but still do eat a lot of cereals when I'm too naseus for anything else. Rice Crispies is one of the few I can keep down. I put banana and strawberry on it though for more nutrients. I am already taking a ton of great pro-biotics and also Vytlazyme the digestive enzyme that gets taken between meals. My LLMD recommended it. I don't however have any enzymes that I take with foods. I was taking "Free aminos" but have stopped cuz of being overwhelmed with so many supplements (at least 45 a day). Most lymies are gluten and dairy intolerant. These two things cause inflammation. Grains in general are not that good for us, there is a book about this called Dangerous Grains. If you must have grains, I would stick with Brown Rice, Quinoa and Amaranth. Lyme is a disease of inflammation and just eliminating these two things will improve a lot of your symptoms. The next thing that I would do is to find a doctor that can perform the Heidelburg Capsule test on you to determine if your body makes any stomach acid. Most Lymies don't, hence our digestion is all screwed up. You can go to www.phcapsule.com to find a doctor who can do this test. I take about 3 capsules with each meal. My MD takes about 12. If you have an alkaline intestinal environment it is the perfect place for parasites, protozoa, fungus and Bacteria to thrive. You need to make your intestinal environment inhospitable to these organisms. I would take a lot of probiotics and a good quality digestive enzyme such as Wobenzyme or Infazyme by American Biologics. I would take these systemically meaning on an empty stomach. The protease in these enzymes when taken without food will actually work to digest old waste and candida in the gut. You also need to do enzymes with meals to help digest your food. If you can tolerate a good fiber supplement, I would look at a product by Dr Gordon called Beyond Fiber, to keep things moving. If you still have problems with this, try doing some teas on occasion that either contain Senna or Cascara Sagrada. I have found that daily coffee enemas have helped my situation more then any other thing except rife. My mother in law was tested and found to be both Gluten and Dairy intolerant. She could not stick to such a regimented diet. She kept insisting that it did not bother her. She ended up dying of Colon Cancer. My friend's doctor told her the same thing and my mom's doctor told her to avoid Gluten. Gluten senstivities are becoming common place. Sometimes the side effects of Gluten can be silent. For example if you have any other food allergies, they very well could be exascerbated by Gluten. If you have any Lyme Arthritis, it can be accelerated by Gluten by causing inflammation. If you have any brain fog or ADD symptoms Gluten can be at issue. Sometimes it can take more then 6 months for the benefits of remaining Gluten free to manifest itself. Dr athon MD at Tahoma clinic who is Suzanne Sommers doctor told me to read the book Dangerous Grains. The problem is so many of the Gluten containing grains are genetically modified to produce more Gluten. All GMO foods have a very negative effect on our health and some believe can actually modify our DNA. Gluten is not recommended on any Lyme diet and trust me I have every book written on the Lyme diet. Also many Lymies follow the MS diet which is also no gluten or dairy. Lyme is a disease of inflammation and eliminating Gluten and Dairy significantly reduces inflammatory response. You may not realize you are reaping benefits from being Gluten free, but trust me your body knows. If you are having such serious Gastro Issues then something you are doing is not working for you, and needs dietary modification. My LLMD along with several other experts I've spoken too tell me a healthy balanced diet is the most important, and I think eating vegan is the best you can do for yourself and for the planet/world. My serious stomach issues are not from what I'm eating or not eating, but soley from the lyme and many co-infections I've had for most of my life. The only way my eating and appetite has gotten so much better is through multiple abx and tons of alternative therapies over the years. Of course it's ideal to eat perfectly and drink tons of water. Unfortunately when you are too sick you cannot do that. I didn't say rice crispies was the healthiest, I know it's not. but it is one of the few cereals I can eat when I can't eat anything else, instead of going hungry. So having a bowl a day is not going to hurt me, and when I can cut them out I will. I also try to eat kashi heart to heart and Kashi honey puffs cereals along with other whole/multi grain ones. I soley drink almond milk in all cereals and love it. Going from 5 bowls of rice chex or crispix everyday down to one bowl of kashi mixed with rice crispies is a big improvement for me. I try to eat things that have as little sugar as possible, not including fresh fruits. I know as I continue to get better I'll be able to eat better. On the other hand I know of people that eat fast food and artificial junk everyday and have zero health probs are live their lives doing whatever they please. Not that they won't have high blood pressure and heart disease down the road. As one who has recovered from Lyme, I totally understand the Lyme and Gut factor. The coil machine, Balancing my Thyroid gland and adrenals, Dr. Ohira's probiotic and Infazyme by American Biologics, Homeopathic Candida nosodes and antiparasitic herbs really helped my Gut issues. I hope that you too will find resolution to your digestive issues too. The main thing with diet is to eat food as close to it's natural state as you can. However, I maintain that none of the processed cereals you mention are doing your health any good. Kashi is highly processed and loaded with sugar. Processed foods are convenient, but nothing more then junk food. I would instead eat the whole grain. There are two ways that the Gerson Clinic recommended for my sister who recovered from stage 4 Ovarian Cancer. One is to take the whole unprocessed grain, grind it in a small blender jar and soak it overnight. in water and eat it the next morning as a cereal. She would often put about 8 different grains together. You can also add any nuts, seeds, flax , Salba or whatever suits your taste. If you need the sweet factor add a little xylitol which is very healthy for teeth and bones or Stevia if you can handle the after taste. The other option is to grind your grains and make a cooked cereal, you probably destroy more vitamins in the cooking process, however the soaked grains can have a bit of a rubbery texture that some people find not palatable. Lymies have serious malabsorption issues and drinking raw fresh green juices and smoothies, will help to replenish the massive amounts of nutrients and enzymes that we need to restore health. Fermenting your vegies similar to the process of making Sour Kraut or Kimchi is also very healthy. I am not disputing that vegan is better, due to the massive amounts of antibiotics that are fed to animals in their grains which also contribute to Candida overgrowth issues and compromise the immune system. The only meat that is healthy is organic grass fed without grains or free range chickens that are allowed to eat bugs, Alaska Salmon that are not farm raised. It is hard to get good quality meats and the best alternative is to eat vegan. As I stated earlier Gluten is bad, whether you feel any symptoms or not. Dr Singleton MD in his book The Lyme Disease Solution recommends everyone get a C reactive protein test. He also lists Pro-inflammatory factors on page 193 and Consumption Wheat and Dairy is on the list. I would also recommend the the book The Lyme Diet by Dr Nicola McFadzean and the Lyme Disease Cookbook that Rosner is selling on his site. The symptoms of Gluten consumption can be silent until one develops Colon Cancer or Celiacs disease. It is a GMO food and it has an inflammatory response and will cause inflammation and make Lyme worse, whether you realize it or not. Look at any Lyme diet and Gluten and Dairy are out, the Body Ecology Diet recommends lots of fermented vegies due to the high level of enzymes present. The MS diet was the recommended diet until these recent Lyme specific diet books came out and it was no Gluten and Dairy either. I realize how hard it is to give up Gluten as so much of our comfort foods are made with flour. You are not the only person I have encountered that is resistant to wanting to give up Gluten, I was resistant at first until I realized after a year some of my most serious symptoms had resolved being Gluten free. I don't recall how long you stated that you gave up Gluten, but sometimes the positive benefits take over 6 months to manifest. Gluten could be silently damaging you and you wouldn't even know it. Read the book Dangerous Grains if you really want a professional perspective and want to help yourself heal. BTW. I did not test as gluten intolerant through a stool sample, in other words according to tests, Gluten was okay for me, but my LLMD said that everyone should avoid Gluten it eventually damages the cilia lining in the intestines. I know that I feel less arthritic and less allergic when not eating Gluten. My MD is a NAET practitioner and has worked on Dr Klinghardt to resolve some of his allergies and also used to work for Dr. athon at the Tahoma clinic. I trust her advice she has been around many years in the Alternative Medicine field and the bulk of her practice now consists of Lyme patients and she has helped many of them recover. If you want to be a vegan that eats healthy, you should eat unprocessed, non GMO gluten free grains and organic vegies. Also if you have been on long term antibiotics, no doubt you have a fungal overgrowth problem meaning that you should avoid fruits and any cereals with any kind of sweeteners that feed the fungus and yeast, unless they are sweetened with Stevia or Xylitol which Candida does not feed on. Yes there are many people out there who consume massive amounts of junk food and live on Macs hamburgers and hot dogs, but some people are genetically better equipped to handle all of the toxins that there bodies are exposed to on a daily basis including those consumed through diet. If you have Lyme disease and coinfections and you do a Methylation Panel, you will more then likely find many mutations in your DNA that prevents your liver from detoxing your body appropriately. I have had several methylation panels done and after reading the results, I realized that I need to consume a lot of Cruciferous vegetable and antioxidants that will help eliminate the toxic build up in my body. Hydrocarbons were especially problematic for me according to DNA testing. I already knew that because I had severe MCS and Hydrocarbons were at the top of the list followed by plastics. I am past all of my MCS and still have some minor foods allergies if I consume the same foods too often. I clear my own allergies with a protocol called NAET. Unfortunately, most Allopathic doctors are not trained in the importance of diet in less they are an ACAM doctor. The sad thing is most doctors spend less then 30 minutes with their patients and then pull out a prescription pad. This is not quality health care, but nothing more then pill pushing in my book. I have a doctor that is an MD an Homeopath that spends an entire 4 hours with me doing energetic testing and taking notes on all of my symptoms, unfortunately he is in Mexico where I only get to see him once in awhile. He chooses not to see too many patients so he can have a quality visit with the patients that he has. The other issue with the people who appear to be quite healthy who consume junk food, is the age factor. They may get away with eating junk when they are young but it eventually takes it's toll. You also really don't know what other people's health status is, because most people don't want to talk about the fact that they are on 2 different blood pressure medications, Nexium for digestive issues, blood thinners, and diabetes medicine, medicine for arthritis and restless leg syndrome and the list goes on. I always wondered why when I eat relatively healthy that junk food junkies seemed healthier. I started going to a weight loss clinic run by doctors because Lyme literally took out my Thyroid and I gained a lot of weight. I was sitting and waiting for an appointment and the wall was not very sound proof. I could hear the doctor talking to one of his obese patients and asked her what meds she was on and she listed about 9 different medications. Things are not always as they seem and since the majority of Americans are obese, you can bet that they all have health problems and if they don't, they were blessed with good genes. Lyme is a very serious chronic illness that can lead to Cancer down the road if it is not resolved. If you look at any Alternative Cancer Therapies, diet is front and center with regard to recovery of health. This combination is supposed to be very easy to digest (and a great detox as well). Mung beans are super high in protein (14g/cup) and fiber. I don't really care for beans, in general, but I like the small mung bean.I soak mine for about 24 hours, some will start sprouting. Then I cook them until tender (maybe15 -25 minutes depending on your palette). You can add savory seasonings for a lunch or dinner or more sweet seasonings for breakfast. I like ginger, saffron, cardomom and the sweetener of your choice.I cup of mung beans will keep me full for hours and hours. Hi there, I have no other food allergies and being gluten free did nothing for me in any way. My LLMD along with several other experts I've spoken too tell me a healthy balanced diet is the most important, and I think eating vegan is the best you can do for yourself and for the planet/world. My serious stomach issues are not from what I'm eating or not eating, but soley from the lyme and many co-infections I've had for most of my life. The only way my eating and appetite has gotten so much better is through multiple abx and tons of alternative therapies over the years. Of course it's ideal to eat perfectly and drink tons of water. Unfortunately when you are too sick you cannot do that. I didn't say rice crispies was the healthiest, I know it's not. but it is one of the few cereals I can eat when I can't eat anything else, instead of going hungry. So having a bowl a day is not going to hurt me, and when I can cut them out I will. I also try to eat kashi heart to heart and Kashi honey puffs cereals along with other whole/multi grain ones. I soley drink almond milk in all cereals and love it. Going from 5 bowls of rice chex or crispix everyday down to one bowl of kashi mixed with rice crispies is a big improvement for me. I try to eat things that have as little sugar as possible, not including fresh fruits. I know as I continue to get better I'll be able to eat better. On the other hand I know of people that eat fast food and artificial junk everyday and have zero health probs are live their lives doing whatever they please. Not that they won't have high blood pressure and heart disease down the road. My mother in law was tested and found to be both Gluten and Dairy intolerant. She could not stick to such a regimented diet. She kept insisting that it did not bother her. She ended up dying of Colon Cancer. My friend's doctor told her the same thing and my mom's doctor told her to avoid Gluten. Gluten senstivities are becoming common place. Sometimes the side effects of Gluten can be silent. For example if you have any other food allergies, they very well could be exascerbated by Gluten. If you have any Lyme Arthritis, it can be accelerated by Gluten by causing inflammation. If you have any brain fog or ADD symptoms Gluten can be at issue. Sometimes it can take more then 6 months for the benefits of remaining Gluten free to manifest itself. Dr athon MD at Tahoma clinic who is Suzanne Sommers doctor told me to read the book Dangerous Grains. The problem is so many of the Gluten containing grains are genetically modified to produce more Gluten. All GMO foods have a very negative effect on our health and some believe can actually modify our DNA. Gluten is not recommended on any Lyme diet and trust me I have every book written on the Lyme diet. Also many Lymies follow the MS diet which is also no gluten or dairy. Lyme is a disease of inflammation and eliminating Gluten and Dairy significantly reduces inflammatory response. You may not realize you are reaping benefits from being Gluten free, but trust me your body knows. If you are having such serious Gastro Issues then something you are doing is not working for you, and needs dietary modification.Rice Crispies are not made from whole grain rice, but are made from denatured white rice. They are essentially junk food. I personally don't believe that they are a healthy choice for someone who is sick with Lyme disease. The diet is the number one most important factor in recovery from Lyme and managing symptoms. If you need the fiber that grains have to offer, I would recommend Salba as a great healthy fiber. I top off blueberries with Almond milk, and Salba. Yum! I do a lot of research on Lyme disease and have been for over 10 years.
