O.K. here's the recipe for the Banana Split Pie......again. I hope you can

enjoy it as much as I did. Even my family loved it. Like I said before, I

had no problems with my BGs after eating it, but then you know the old

saying " different strokes for different folks " . I really have no idea how

many carbs it contains. That wasn't listed on the recipe.

1 graham cracker crust:

Crush (or grind) 1 pkg of graham crackers (3 pks to the box)

Melt 1/3 stick margarine

Mix crumbs and melted margarine and gently pack in

bottom of pie plate.

1 pkg. (4 ozs.) sugar-free Instant vanilla pudding mix

2 cups low-fat milk

2 bananas, sliced

1 can (15 ozs.) crushed pineapple (packed in it's own juice)

1 cup Lite Cool Whip

1 tsp. vanilla

1/2 cup chopped pecans

Mix pudding with milk and beat until thick, pour into

crust. Place sliced bananas over pudding. Drain, then squeeze pineapple

to remove all juice, sprinkle on top of bananas. Cover with

Cool Whip, sprinkle pecans on top. Chill well.

Like I said before, it's delicious and so easy to make. I just don't

overindulge on anything and I didn't have any problems with my BGs. Even

the non-diabetics just loved it. It is now a requirement for all of our

family " get-to-gathers " .

Love to all,

Naomi (Tootie)

Re Banana Pie Recipe??

Yep. It's a shame I don't like bananas. That would be a good one to fix,

then freeze small slices to eat later.

I'll bet it would be good substituting cantalope or melon also.

Or thinly sliced apples. I just might have to give it a try. I'm going to

enter it in my MasterChef program first and look at the nutritional

analysis. At first glance, it looks to me to be something I could tolerate

ok if eaten with a meal.

Thanks for the idea, Dave.

I have to go to the grocery store in a bit. Since I hate bananas, I'm going

to try it with sliced strawberries. <g>

Dave that is my problem. There is no such thing as a lil' bit when it comes

to food that has a lot of carbs or artificial sweetner....it starts talking

to me....even when the fridge is shut...it calls out to me....

Now protein does not. Like pork rinds as a snack. If it were potato

chips/pretzels I want more and more and more till the bag is gone. I have

some pork rinds and it's like, OK that is enough and I can actually shut the

bag for another day.

Over the holidays I made cheesecake with cream cheese and sugar free lemon

Jell-O. I had a couple of pieces. Blood sugars were fine, but I wanted MORE.

I was not satisfied.

Once when we were out to dinner my hubby had this humungous piece of

chocolate cake with hot fudge over it. We (there were 9 of us) passed it

around and took bites. I did too. It was gross and I did not want any more.

I also felt that way having one Hershey's kiss. I had been craving some

chocolate and I kept dreaming about a kiss and how yummy they were so I had

one and puke it tasted soooooooo sweet after months of not having sweets.

Reminded me of chocolate covered raisins which I HATE. So that was not a

problem of a little bit.

This is probably more than you ever wanted to know huh? = ) I keep

forgetting to buy myself one of those T-shirts that say " Help I'm talking and

Interesting..I recently had that experience with a gorgeous silk antique

Japanese kimono that I recently saw in a shop. It was $150, reduced from

$300. It kept whispering " buy me, buy me, I " m yours.... " I walked out of the

store mumbling to myself, Vicki, you absolutely do NOT need another antique

silk kimono...you already have four in your closet, you don't wear 'em, you

don't have anyplace to display them, you don't have a spare $150...forget it,

lady. Thought about it the rest of day. Woke up in the middle of the night

thinking " I wonder if the store owner would trade? " Called her next morning

and asked; she said " sure, bring them in and I'll see. " So I did. And she

did! My four for this one! Then I had to rearrange my furniture and take

down some favorite pictures from wall...but it's up now and boy, am I a happy

camper! :-)

Isn't there a way to make this pie into a lower carb version? Heavy cream

and water to replace the milk, regular whipped cream for the topping...only

a small portion of crushed pineapple rather than the whole can and some

other fruit such as Teri's strawberries or blueberries and leave off the

crust or use one of the lc recipes that are out there?

Just curious...not trying to " kill " the messenger but think we can improve

upon the idea for the lc people.

Also, Susie, you are right about Diabetes Forecast. When a person joins ADA

and gets that " free " subscription, most of your $25.00 (maybe more now) goes

to the magazine subscription. I asked about it once and when I found out not

much $ for research from our dues I stopped the subscription. What folly!

If I have time, I want to figure this one out! It's got to have at least

75 g carbs per serving. I may have most resources here at home to do this

(Netzger).

OK, Folks, Here's the scoop on that Banana Split Pie. --- The stats are

as good as I can come up with in a hurry. I've guestimated on some items

--- like figuring 15 oz pineapple is 2 cups, roughly. I took most of the

numbers from Netzger. Some from a personal data base under " Diet Watch " .

The columns will doubtless fall apart on " send " . (They usually do.)

So I was off in my guesstimate. -- It'snot the first time. Nor probably

the last! <G>

Hey Susie,

I don't think it's that bad. After all....only 2 bananas on the whole pie

(which would only give you 1/4 of a banana if you cut it in 8 equal slices).

I don't even eat that much. The pineapple is not packed in sugar and is

really quite tart. The whole can only contains 17 carbs so that would be

about 2.13 carbs per piece and there's only 15 grams of sugar which would

come out a little less than 2 per piece. The Cool Whip has 1 gram of sugar

and 20 calories which would be 1/8 gram of sugar and 2.5 calories. Don't

knock it till you've tried it.

I've already given up everything else....so I have to have something sinful

to indulge in. Can't drive, can't walk, sure can't dance anymore and went

into solitary confinement 3 years ago so don't have sex! What else can I

give up????

ROTHLOL but not wetting my pants,

Tootie

P.S. Sure hope my grandchildren don't happen to come in now and read this.

Hahaha
