Like I said before, I had no problems with my BGs after eating it, but then you know the old saying " different strokes for different folks " . I really have no idea how many carbs it contains. That wasn't listed on the recipe. 1 graham cracker crust: Crush (or grind) 1 pkg of graham crackers (3 pks to the box) Melt 1/3 stick margarine Mix crumbs and melted margarine and gently pack in bottom of pie plate. 1 pkg. (4 ozs.) sugar-free Instant vanilla pudding mix 2 cups low-fat milk 2 bananas, sliced 1 can (15 ozs.) crushed pineapple (packed in it's own juice) 1 cup Lite Cool Whip 1 tsp. vanilla 1/2 cup chopped pecans Mix pudding with milk and beat until thick, pour into crust. Place sliced bananas over pudding. Drain, then squeeze pineapple to remove all juice, sprinkle on top of bananas. Cover with Cool Whip, sprinkle pecans on top. Chill well. Like I said before, it's delicious and so easy to make. I just don't overindulge on anything and I didn't have any problems with my BGs. Even the non-diabetics just loved it. Reminded me of chocolate covered raisins which I HATE. So that was not a problem of a little bit. Heavy cream and water to replace the milk, regular whipped cream for the topping...only a small portion of crushed pineapple rather than the whole can and some other fruit such as Teri's strawberries or blueberries and leave off the crust or use one of the lc recipes that are out there? Just curious...not trying to " kill " the messenger but think we can improve upon the idea for the lc people. Also, Susie, you are right about Diabetes Forecast. When a person joins ADA and gets that " free " subscription, most of your $25.00 (maybe more now) goes to the magazine subscription. I asked about it once and when I found out not much $ for research from our dues I stopped the subscription. What folly! After all....only 2 bananas on the whole pie (which would only give you 1/4 of a banana if you cut it in 8 equal slices). I don't even eat that much. The pineapple is not packed in sugar and is really quite tart. The whole can only contains 17 carbs so that would be about 2.13 carbs per piece and there's only 15 grams of sugar which would come out a little less than 2 per piece. The Cool Whip has 1 gram of sugar and 20 calories which would be 1/8 gram of sugar and 2.5 calories. Don't knock it till you've tried it. I've already given up everything else....so I have to have something sinful to indulge in. Can't drive, can't walk, sure can't dance anymore and went into solitary confinement 3 years ago so don't have sex! What else can I give up???? ROTHLOL but not wetting my pants, Tootie P.S.
