Injera - A Fermented Food

I am originally from Ethiopia and one of our staple foods is "injera" made of Teff (a superfood, naturally gluten-free grain) and fermented before baked on a clay slab into a thin crepe like bread.

That said, we have recently discovered that our DD, who LOVES injera, also seems to have soft BMs soon after she has had injera. I, too, always had soft BMs whenever I ate Ethiopian food (not my favorite, ironically enough as I do not enjoy spicy foods) and until recently, I always attributed the soft BMs to the spices and not the injera. My aha! moment ocurred because of this group and someone mentioning the study on fermented foods and how good they are for the digestion. Well, I am here to testify that it surely works for our DD.

To those of you who are curious and/or willing to try it, injera is available in ALL Ethiopian restaurants. There are also many Ethiopian markets in the more urban East/West coast cities. If interested, try to google one up near you. Make sure to ask them how their injera is made and with what ingredients, as not all injera are created equal. Some may have more wheat in them than Teff.

Price's research, native populations around the world generally have at least one fermented food or beverage as part of their typical diet - and I believe the WAP Foundation and Sally Fallon encourage daily intake of fermented foods/beverages. Personally, I think that fermented foods every day are a fantastic source of naturally occurring, live/active probiotics - and a variety of strains. that said, I often have a hard time keeping up with my own cultures (being milk/casein-free, we cannot rely on regular milk-based yogurt,kefir, cultures - so I try to make kombucha, sauerkraut, other fermented veggies, sometimes water kefir, etc.).
