I would substitute coconut oil or olive oil when she calls for margarine. When you use it to sub for oil, do you have to melt it to measure. Just a thought though, be careful with olive oil too if it gets to hot especially when frying something, it changes its "chemistry" so to speak and has not so healthy reactions with your food. I love VCO in things like pie crusts, because it gives the crust a coconut flavor. Olive oil is a much stronger flavor, so I never use it in sweet pastry; only savory.I use Nutiva VCO in the recipe-specified quantity in a beloved old banana bread recipe, instead of butter and the bread is even better!
