As a vegetarian, lots of times I adjust recipes by tossing in one or two handfuls of rinsed dark red kidney beans or a tablespoon or 2 of sunflower kernels and I get my proteins. Awesome fried rice Hi guys! I just had to share this recipe that I found off another board. (Well, it's not so much a recipe as an idea!) LO-FAT FRIED RICE Cooked rice (I used cooked converted rice & left out the oil, butter, etc) Pam Soy Sauce Leftover veggies Spritz your frying pan with PAM and heat. Toss in your cooked rice until it starts to get crispy on the bottom. Then toss in your leftover veggies and lots of soy sauce. Makes a very scrumptious and filling lunch, even if you are used to meat. (Points vary depending on what you put in it). YUM! Enjoy.
