~~~~~~~~~The Story of Chanukah~~~~~~~~

The joyful holiday of Chanukah, the Festival of Lights, is celebrated for eight

days. Over 2000 years ago in Syria, when the Hebrews won the Temple in

Jerusalem back from the cruel king Antiochus, there was only enough lamp oit to

last for one day. When the oil burned for eight days, it was considered a

miracle. To commemorate this miracle. on each night of the holiday an

additional candle is lit on a menorah. It is traditional to eat foods cooked in

oil, such as Latkes (potato pancakes). Shredded potatoes are mixed with egg and

flour, dropped by spoonfuls into simmering oil and fried until deliciously crisp

and golden.
