teflon or non stick coated aluminum is a very good cooking utensil

because the non stick surface acts as a barrier to the aluminum and

the aluminuim spreads the heat more evenly than stainless steel.

i don't think aluminum baking dishes are as much as a concern as with

pots were there may be salted water in and the aluminuim goes into

solution.
