Chicken, turkey and tuna get boring after a while . Thanks. I really try to keep it simple yet make it a little interesting. I will throw in some chilled shrimp here and there, and make chicken salad with red grapes instead of tuna salad...but then have grilled salmon a couple of times in the week. suggested that I eat more beans (my sister regrets that) to better stablize my blood sugar and I have been experimenting with that...and enjoying the change. I really love eggs, but hate egg white only eggs (hate might be too strong a word), so I wait and have three fied eggs over toast on frre day, or wet-scrambled cheese eggs. Mmmmm. Guest guest
Oooh, another great twist on tuna is to throw a portion of tuna on some baby spinach greens and top with fat-free honey mustard dressing. Add a piece of fruit on the side for your carb and yummers! That salad was the result of an almost-bare refrigerator one day. Necessity is the mother of invention, as they say. Kels, I have been eating more beans myself... making some really awesome soups and chilis. Then I just keep the pot of soup/stew in the fridge and I have a ready-made meal just a 2-minute zap in the micro away! Just a note, if you are making any homemade bean soups, you can eliminate the gassy side effects by soaking the beans for about 2 hours, then discarding the soak-water and refilling with fresh water/chicken broth to make the soup/stew.
