Tiff. ******************************************************* Reviews by Lifetime Member: Chocolate Mint Cookies - definately a two thumbs up! 2 Cautions - I didn't realize that it called for " Fat Free " margarine and I used light - this bumped the points to 4 points each! It also says to chill for 1 hour - it's going to be more like 2-3 or believe me - you're going to have a sticky mess with less time! I also used 1/2 an Andies candy on each - it's enough - then I sprinkled on some holiday sprinkles to make them more festive. That's one attractive little cookie! I calculated everything that had calories - the flour alone was 10,000 calories! I'm not completely done baking - so I don't know how many I'll end up with. Can post that later. Buffalo Chicken Lasagna - again another winner! 1 caution - unless you like hot, hot, hot food - decrease the amount of hot sauce used. It called for 2-3 Tbs. - I used 1 1/2 Tbs - it was edible - but still made my nose run. Sniff, sniff - see?! Recipes to follow! ~Started Jan. 2, 2001~ Made Lifetime Nov. 27, 2001 ~ Height: 5'6'~Small Frame~ 200.8 / 138 / 143 artzymom 12/13/2001 2:23:06 PM Did I miss the recipes they both sound like something my family would like! losin'it! 12/13/2001 2:29:15 PM Chocolate Mint Cookies 3 packages Andies Candies (28 in pack) 3/4 c trans fat-free margarine 1 1/2 c dark brown sugar 2 Tbsp water 1 package (12 oz) semisweet chocolate chips 2 large eggs 2 1/2 c all-purpose flour 1 1/4 tsp baking soda Unwrap all the mints, and set aside. In a saucepan, heat and mix together the margarine, sugar, and water. Add the chocolate chips, and stir to partially melt. Remove from the heat, and continue to stir until melted. Pour into a bowl, and let cool for 10 minutes. Beat in the eggs at high speed. Add the remaining ingredients, and beat to blend. Chill the dough for 1 hour. Line baking sheets with foil. Roll the dough into small balls (about 1 " in diameter). Bake at 350[deg]F for 10 to 12 minutes. Place a mint on each cookie as you remove them from the oven. Remove the cookies from the sheet. As soon as the mints have softened, spread them over the cookies. " They look festive and taste brownie-rich. Just one does the trick, " raved a tester. Makes 84 cookies. Per cookie: 87 cal, 4 g fat ************************************************** Buffalo Chicken Lasagna 12 lasagna noodles, uncooked 1 lb skinless boneless chicken breast, cubed 4 cups low-fat spaghetti sauce, no more than 2 grams fat per serving 1 1/2 cups water 2-3 Tbsp. hot sauce 2 Tbsp. vinegar 1 tsp. garlic salt 15 oz. nonfat ricotta cheese 1/2 cup egg substitute 3/4 cup crumbled bleu cheese Preheat oven to 350*F. Spray a large nonstick skillet with nonstick cooking spray; place over medium high heat until hot. Add chicken and saute 4 minutes. Drain well. Stir in spaghetti sauce, water, hot sauce, vinegar and garlic salt. In a small bowl, combine ricotta cheese and egg substitute; set aside. Spray a 9x13 baking pan with cooking spray. Spread 1 cup of the sauce over the bottom of the pan. Arrange 3 or 4 pieces of lasagna over sauce. Spread with sauce, then layer with the ricotta mixture. Repeat layers until all ingredients are used, ending with sauce. Cover and bake for 1 hour 10 minutes. Uncover and sprinkle with bleu cheese and bake 5 more minutes, uncovered. Cover and let stand 15 minutes before serving. I'd recommend cutting the chicken into little, little pieces. We cut ours into about 1-inch chunks, and it would be nice to have it more dispersed than it is. Otherwise very good. A little bit of bleu cheese goes a long way, it turns out! 5 ft., 1 inch 138 / 107 / 115 mahjong 12/13/2001 4:56:44 PM I put the Buffalo Chicken Lasagna into MasterCook and came up with 9 servings at 12 points each. Did anyone refigure the points with the ingredients you used? losin'it! 12/13/2001 5:15:25 PM I just calculated what I made today (Buffalo Chicken) It did come out to be more - 6 servings at 8 points each. It would have been more - but I used a little less than a pound of chicken, only used 1 jar of sauce which is about 3 cups and the recipe calls for four. I think I also used less Blue Cheese than what it called for - I used 4 of the single serve packs of the Treasure Cave and I used 9 oven ready lasagna noodles and the recipe calls for 12 regular lasagna noodles. Glad you got me thinking - I always recalculate recipes - but I was too lazy after baking all of those cookies - it made 86!!! ===== PS Remember: Be STRONG, Be healthy. Do NOT relinguish.
