Hi Peggy. Would you have a gluten-free, "milk" free recipe for making Kefir? I can tolerate coconut milk or "lactose starters" to make yogurt or kefir. Can't "stomach" (lol) cow's milk, almond, milk, rice milk, goat's milk, and all because of allergies flaring with Lyme's and liver detox issues compounding allergy developments. I have nil friendly flora after 4 years of taking (trying different) probiotics - Ultra Flora Plus, TheraLac, Culturelle, Saccharomyces Boulardii, etc. etc. etc. Just can't seem to get my gut flora in order. I have a leaky gut that has allowed candida into my system, testing positive IgG for it in blood work this past Spring, getting Diflucan, which wreaked havoc! There's got to be a way to take charge here and change my gut flora! Since you've been making Kefir for a while, I wondered if you ever came across a

Celiac-friendly, lactose-intolerant user recipe. :-)

Hi Jim,

I've been making kefir for several years. In this heat my grains are reproducing like rabbits. Right now I have 3 pints of kefir culturing--two in the fridge and one on the counter. And I have almost two gallons of homemade kefir in the fridge. We can't drink it fast enough to keep up with its growth right now. It'll settle down some once the weather cools a bit. I love the stuff. It's a very tasty part of my anti-yeast diet.

Peggy, you can dry extra grains for long term storage, or you can freeze them for shorter term storage. There are directions on the Internet. I dried some grains and they are sitting in a small jar in my fridge. If something happens to my working kefir grains, I have a backup!

I followed his approach from day one. I've always used dairy as I like it and have no problem with it. I tried making kefir from alternative grain milks like almond and soy, but didn't like it at all. However, I think water kefir would taste fine. And you can make it from coconut milk--it's mentioned as an option in "The Body Ecology Diet" though I don't subscribe to her idea that you should buy the powdered grains, which she sells. I tried it, didn't work nearly as well, is vastly more expensive, and I like the grains I use. They're foolproof as long as you do things properly, which is easy as pie.

For additional friendly flora, have you tried kombucha? This is non-dairy. You can find info about that on the website listed above, as well as all over the net.

When I came off antibiotics and really needed to seriously restore flora, I used a product which worked very well for me, Pharmax HLC Synbiotic Intensive. It's a powder that you dissolve in water and take once a day for 7 days. After that you use another probiotic to maintain. I use HLC High Potency. These are my favorite probiotics. There's lots of info on the Pharmax products online. This place has the best price I've found, plus they're in NC and ship quickly, so in Maine you should receive any order from them within 2-3 days.

BTW, all kefir is gluten-free as far as I know. It's called "grains" but that's just a term--it's not a grain, it's a friendly bacteria. I think "grains" must be intended to be descriptive, though it's not--they look like little clumps of translucent cooked cauliflower. There are pictures of the "grains" at the link above.

I know. I have some in my freezer, though drying would be better for long-term. I just haven't gotten around to it. There seems to be no end of things to do every day, especially when you have to spend a lot of time focusing on your health. The backup plan is a necessity, IMHO, just in case something happens, like accidentally dropping the whole thing on the floor. That's why I have two jars in the fridge, in addition to the one culturing on the counter. I never put all my eggs in one basket, or all my kefir in one jar!

Hi Susie,

I haven't found any kimchee without sugar. Have you, and if so, what brand? I did manage to order some nice, clean cultured vegetables from a guy in Baltimore. But then they went out of business, probably not enough orders. So that was the end of that.

I really love the cultured vegetables I make with the whey that forms with my kefir. I have to let it sit out until separation occurs and then hope the whey is on the top. When it is, I pour some off. It only takes a tablespoon or two. I found out how to do this on the Internet but right now I cannot find the link. No sugar or sweetner is added, just salt to taste. hi peggywe just make the kimchi ourselves, a jar or two at a time. it ferments in a few days and then you keep it in the fridge. my husband does all the chopping, i just tell him what to do so it is really easy :>), and once you have done it a few times it doesn't take more time than chopping veggies for a stir fry.there are lots of recipes on the web. you might find a kimchi cookbook at the library, there are some good ones out there. the basic ingredients we use are napa cabbage, carrots, garlic, ginger. hot pepper if you like. and anything else, like scallions, radishes with their leaves, chunks of turnip, etc etc. some people use salt and whey to add to the lactos.xosusie Hi Susie, I haven't found any kimchee without sugar.
