Guest guest Posted June 24, 2009 Report Share Posted June 24, 2009 We use turmeric in all the curries we cook. There are 2 basic recipes which I use very often. (1). Heat about 2 tablespoons of oil. Put chopped cumin seeds,chopped ginger in it. After the cumin seeds turn little brown, add turmeric,coriander powder and green chillies in it. This is called the seasoning. Now to this you can add any cut up vegetables. You could add cut up cauliflower. You could add chopped onions and chicken cubes to this. Cover and cook on low heat till done. It is so earthy, hearty and full of characters. Thank you for the recipe. I need to put together something simple, pleasant, and quick for the kids' lunch before I take off to the airport. Add chopped onions. saute it till onion is brown and the oil is seperated on medium heat.Add ginger, garlic, green chillies. Fry for a minute. Add to it garam masala and turmeric powder. Saute for a minute till the oil seperates. Add chopped tomatoes and cook till oil separates. To this you can add soaked lentils and pressure cook. You can add chicken cubed and cook it. You can add any other meats, soaked beans. Add plenty of water to make gravy like consistency. Garnish this with cilantro leaves. This curry goes with rice. The previous one would be the dry one which would go with the bread.
