My mom and I decided back in May (before we even joined WW) that we wanted more veggies in our diet. My doctor was concerned about my cholesterol, and recommended amending my diets with less saturated fat and more fruits and veggies. We found an Organic Farmers Alliance who did a subscription service through the local food co-operative. All summer long we've been getting the freshest, most beautiful veggies and fruits, and new ones we've never tried before. I bought a great cookbook called " Vegetarian Cooking for Everyone, " by Deborah Madison, with lots of vegetable recipes. I've discovered I really like baked eggplant with feta cheese, tomatoes, and balsamic vinegar, only 1 pt. a serving. I make a turnip and potato gratin with lowfat bechamel sauce and blue cheese for just 4 pts a serving. I also boil turnip greens or steam kale and serve them with vinegar for 0 pts. What else? Cucumber salad with soy sauce, mirin, rice vinegar, and sugar, less than a pt. per serving. Cherry tomatoes with yogurt dill dressing. Roasted root vegetables, sprayed with olive oil spray, salted and peppered, just 3 pts. a serving. I have even more where those came from! If anyone's interested, I could post recipes. Some of them involve a fair amount of prep, but others are really easy! Well, I had a good birthday, thanks for the bday wishes, Connie! I even ate dinner out and stayed OP thanks to banked pts.! Maybe I won't have a big loss this Thursday at WI, but at least I enjoyed celebrating with my family, and know I can lose next week. We'll see...LOL! No guilt! Ya'll have a good week!
