I may lurk for a bit... Are you saying it is always made with caffeinated teas? I am glad you said SCOBY is not a mushroom, I thought it was! So if I understand correctly, you are always using the original SCOBY? I like the idea you are adding to the top, drawing off the bottom... I have gallon sun tea jars I use for my distilled and Prilled water, I guess I could use one of them for KT... Oh goody, I think I just got it, one SCOBY will be many at some point? So this actually keep growing? This seems a bit more involved than Kefir, but I like the fact of having another good probiotic drink to consume... Hey, my Kefir grains came today... :-) I will be putting them to work in a little while.. They were pretty warm being in the mail for 3 days, I guess they will be okay.. I heard it takes extreme heat to damage them.. I was concerned they might get stuck in the post office or a worst in a hot truck on Sunday, but the seller send them out as 2 day delivery. Thanks for this KT info, I am saving it for when I start my first batch, a little while after I get the hang of Kefir!!
