Bean and Bacon Soup

½ c. Dried beans, mix or pinto or navy

5 c. Water

¼ c. Diced onion

3 slices cooked bacon, chopped

1 TB taco seasoning

14.5 oz can roasted tomatoes, undrained

Combine all ingredients in 3 quart slow cooker. Cook on high 6-8 hours.

Yield: 5 servings. Per serving (over 1 cup)= 239 Calories; 3g Fat (9.7%

calories from fat); 14g Protein; 41g Carbohydrate; 15g Dietary Fiber; 3mg

Cholesterol; 235mg Sodium. Exchanges: 2 1/2 Grain(Starch); 1 Lean Meat; 1

Vegetable; 1/2 Fat; 0 Other Carbohydrates.
