Because it's potentially not just gluten/casein that the child cannot fully digest. When you give an enzyme, you're helping to ensure that all proteins are digested. For some of our kids, there are foods that cause greater problems than gluten or casein. Sometimes those intolerances can be overcome with enzymes. Additionally, some parents give enzymes when the child is eating outside the home in hopes of counteracting any cross contamination. Many of metal poison people have digestion issues above and beyond the problems with break down of casein and gluten proteins. Enzymes help the general digestion and absorption of food in general. There are various enzymes for various type of food.
