I just made the best thing for dinner...it didn't affect my blood sugar at

roasting chiles is heaven!

This is how I made them

10 roasted and peeled green chiles

colby-jack cheese in slices (sorta thick)

batter:

4 eggs (beaten)

4 tbs of Atkins bake mix

2tbs whole milk

1tsp salt

1/2 tsp pepper

beaten till mixture is smooth

Stuff the cheese in the green chiles and dip in the batter

deep fry in hot oil till brown

delicious! and hardly any carbs!

Sounds great, ! Thanks for the recipe :-) I have a bit of a hard time

finding good chiles around here. Sometimes, though, we go to the Mexican

grocery store in a nearby city.... they usually have some nice ones :-)

Come to think of it, they also have wonderful, huge pork rinds. Bet those

would be good with fresh salsa to round out the meal :-) Where do you get

the Atkins baking mix?

I get it locally. You can get it from the website too. I can't remember

the URL but surely someone else does here...
