This is how I made them 10 roasted and peeled green chiles colby-jack cheese in slices (sorta thick) batter: 4 eggs (beaten) 4 tbs of Atkins bake mix 2tbs whole milk 1tsp salt 1/2 tsp pepper beaten till mixture is smooth Stuff the cheese in the green chiles and dip in the batter deep fry in hot oil till brown delicious! and hardly any carbs! Sometimes, though, we go to the Mexican grocery store in a nearby city.... they usually have some nice ones :-) Come to think of it, they also have wonderful, huge pork rinds.
