I might try muffins too when the winter closes in and my rayburn is lit. (My ex husband taught me to make wonderful corn muffins which his mother (canadian) made for breakfast, (I don't remember if we mixed the coarse cornflour with plain flour or not now, but they were a real treat. same recipe for the mix as my mum's victoria sponge, but with coarse corn flour.
