I don't like applesauce, so I don't do it....but I swear my friend makes waffles with no oil, but equal amount of applesauce. Try it. Lyn Re: Looking for a good low-fat waffle recipe -- I'm thinking you can convert one of those high fat recipes to make the belgian waffles. Just leave out all but 1 tsp. of the fat, and use egg beaters for the eggs. Make sure to spray the waffle iron with Pam or something similar, and they should turn out fine. I've done this with waffle recipes before, not belgian waffles, but hey, it's just bigger dents, right? By the way, I am so impressed that you logged 39 miles during a sinus infection...I can't even imagine the way I was feeling last week! Everyone--My weigh in is tomorrow night! That's it, make muffins....I think they're 1 point, I'd have to calculate. I've also heard people using a chocolate cake mix for this. Also, I use fat free brownie mix, all bran cereal and water to make chocolate muffins that ARE 1 point. If anyone is interested, I'll get the exact amounts.
