With the heat wave currently holding some of us hostage, I decided a few cool

summer recipes seemed appropriate. These also come from the Better Homes and

Gardens publication called Low Calorie Low Fat Recipes:

Mango Frozen Yogurt

3 large (15-16 oz each) ripe mangoes, peeled, pitted and cut up (3 cups)

3/4 cup sugar

1 tablespoon fresh lime juice

1/4 teaspoon ground cardamom

2 - 8oz cartons plain fat free yogurt

Lime peel curls (optional)

Place mangoes, sugar, lime juice and ground cardamom in a blender container

or food processor bowl. Cover and blend or process until smooth. Stir in

yogurt. Transfer to a 2 quart electric ice cream freezer. Freeze according

to manufacturer's directions. Or, pour into a 9X5X3 inch pan. Freeze until

nearly firm (6-8 hours). Break into chunks. Transfer to a chilled large

mixing bowl. Beat with an electric mixer until smooth, but not melted.

Return to cold loaf pan. Cover, freeze until firm (6-8 hours). Garnish with

lime peel curls if desired. Makes 10 servings

Blackberry Frozen Yogurt

2 cups frozen or fresh unsweetened blackberries or one 16 1/2 oz can

blackberries, drained

1/3 to 1/2 cup sugar

1 teaspoon unflavored gelatin

1/2 cup skim milk

1/4 cup water

1 - 8 oz carton plain nonfat yogurt

1 tablespoon finely shredded orange peel

1/4 cup orange juice

Thaw berries, if frozen. Mix sugar and gelatin in a saucepan. Stir in milk

and water. Heat just until gelatin dissolves. Set aside to cool

Place berries in a blender container or food processor bowl. Cover and blend

or process until smooth. Press through sieve, discard seeds. Stir puree,

yogurt, orange peel and juice into gelatin mixture. Transfer to a 2 quart

electric ice cream freezer. Freeze according to manufacturer's directions.

Or pur into a 9X5X3 inch pan. Cover, freeze until nearly firm (about 6

hours). Break into chunks. Transfer to a chilled large mixing bowl. Beat

with an electric mixer until smooth but not melted. Return to cold loaf pan.

Cover, freeze until firm (about 8 hours) Makes 6 servings
