People break them down at different rates so some might see the spike in 1hr, others might not see it for 2-3 hours. I follow Atkins low carb wol and my bgs are now 95 - 125 - when I first started I was in the 180 - 200 range and knew I had to find something or go on meds (I am diet and exercise alone) ... Atkins was a life saver for me. His diet is high protein and hi fat - if you have heart or kidney problems check with your md - you can probably still follow a modified low carb diet with supervision.
