I put a cookie sheet on the stove, put the heat on very low, then set the pot on the cookie sheet on a portion of the sheet that is not over the burner. So the cookie sheet stays warm and the pot stays warm overnight. There is no limit as to the amount as long as you end up with the correct amount when the tea is done... You don't want to throw any water out as you will be weakening the tea.. I see no reason why you can't use a crock pot as along as the post is make with enamel, stainless steel or glass... Another thing you can do is place a trivet under the pot, this may help somewhat. I actually started out to make a pint of the tea, I changed my mind and made a quart.. I put in the correct amount of herbs, but I forgot to double the water!! End result, I have like you a stronger tea in less water.. What I am doing is when I make my sipping tea, instead of using 1 oz of cold tea concentrate, I use 1/2 ounce and the tea tastes correct. Here is a list of trivets, I would think using a higher trivet should help.. Also, did you use a lid on your pot? Using one should also help.. I always use a lid when making my tea.. http://fantes.com/trivets.html AND, one more thought.. The other night I was not feeling well, was supposed to make my tea concentrate that night but didn't.. Instead I made it the next morning at 9:00AM and allowed it to steep until 9:00PM. You can make your tea in the AM, leave it on a low burner during the day, and try turning the burner off say for 1/2 hour, the on for 1/2 hour and continue doing this, it also should help..
