Guest guest Posted November 21, 1999 Report Share Posted November 21, 1999 Hi all - just have pass on a recipe I just tried. Found it on a " low carb " list in the www. Anyway it was called " Mock Mashed Potatoes " . What I did was steam a head of cauliflower and a couple of turnips really really good. Then I put them in a food processor (you could use a mixer too) and added some seasonings - onion flakes, butter, white pepper, chicken bouillon powder and a little salt. Then whirled that up real good in the processor. Add a bit (maybe teaspoon or so) of cream - too much liquid can apparently make it too runny - and also I added about a ounce of cream cheese. Blend, blend, blend and wow, was it good. The recipe said to transfer it too a glass dish and then bake for half and hour but I did not do that part - don't know if that would have made any difference or not. Anyway - it doesn't really taste much like cauliflower or turnips (you could leave those out if you really wanted too). The texture was pretty similar to mashed potatoes. I tested it out tonight to see if that would be something that would work for me on Thanksgiving and also had my family " take a bite " . They all loved it and one of my daughters hates cauliflower but loved this. It is low carb and could be a really good alternative for someone who doesn't eat mashed potatoes. I was so excited (pitiful what can excite me these days huh?) but it is always nice to find something else to eat that won't send the ole' BG soaring!!! If anyone wants I can give the exact recipe but I just kinda " cook " by taste - follow the basic ingredients and adjust seasoning according to what I like. Try this!
