No, I just don't cook like that much any more. I find that cooking plainer

helps keep my food allergies under control better. I still enjoy cooking

exotically I just don't have the occasion to cook like I used to. All my

kids are grown and gone, it's just my husband and me now and he works

evenings. So, I only get to cook a meal for the two of us about once a week

or so. Other than that, it's a plain lamb chop, baked sweet potato and

veggie -- that sort of thing.

But, I love Mexican, Oriental (any kind), German, etc. - and have oodles of

recipes. I cook mostly " off the cuff " too -- I rarely use the recipes I do

have except for a guide.

Why? Because of your diabetes? I cook all kinds of exotic dishes,

including Thai, Vietnamese, and Chinese. Some things I can't make (like

peanut butter sauces), but I have found ways to modify most recipes. For

instance, fat free yohgurt and a bit of sour cream works great as a base for

a yellow curry sauce.

One reason I haven't posted too many recipes to the list is that I cook

mostly " off the cuff " . I'll try to write some of these down next time I

make them. I love spicy food so I do hope that the list doesn't avoid those

type recipes. I love the recipes here, but a lot of them are pretty bland.

Is this a diabetic thing or more of a regional thing? I live in South Texas

where peppers and spices are used a lot!

I'm still a newbie diabetic, and learning (diagnosed 1 1/2 years ago). This

is a fabulous list. Who knew pork rinds contained no carbs? LOL

Oh, and thanks to the person that posted about grating zuchinni as a

substitute for hash browns! What a great idea to serve with a frittata.

One thing I have done on occassion is use sphagetti squash strings as a

substitute for noodles in italian and oriental dishes. They pick up the

flavor of whatever the sauce in the dish is. It works particularly well

with Thai and Vietnamese dishes that call for vermicelli or cellophane

noodles.

Sorry, y'all. I have been off line a few days, too busy to check email. I

will unearth the chili recipe and send it in the next couple of days. I warn

you, though, Cincinnati chili is unlike any chili you have probably had

before.

Rick, what I experienced was a test one hour after eating told me how

each meal affected me, a test at 2 hours told me how well I was dealing

with it. I saw some sugar plots that said the same thing.

There are different times and reasons to check blood glucose. It's always

good to keep an eye on your fasting morning bg. If you are a type II

obviously you won't have to check as often as a type I, but at first, in

order to monitor and control you bg's you will have to check often. Once

things are controlled and you know how and what to eat, you can check a

little less often.
